Snow covered pastures inspired the name of this cheese. Snowfields is made only during the winter months when the animals are unable to graze lush green pastures but instead are fed hay which helps to create a rich, luscious milk. Flavors of toasted nuts and browned butter are prominent with an underlying citrus note. Cheeses are aged for a minimum of six months but often longer allowing for the amino acids to crystallize for a crunchy texture in each bite.
