Mimolette, 12 month
If any cheese has a story to tell, it’s Mimolette. In the 1700’s the French had a tussle with the Dutch and refused their imports. That meant no more Gouda or Edam and those cheeses were sorely missed by the French. So began the making of Mimolette. To differentiate the cheese from Gouda, extra annatto is added to give the cheese a deep orange color. This particular cannonball is aged for about 12 months and the flavor is rich with a balance of salt and caramel. This cheese can certainly stand alone but a whole grain honey mustard would pair nicely.
