The name means “under the ashes”. The grey, ashy coating consists of cinnamon, nutmeg, licorice, cloves, coriander, and fennel. It is a younger cheese, with a mild, buttery paste with the flavor of mushrooms, garlic, soil and all those wonderful flavors associated with truffle. It’s also an excellent melting cheese, so grab some focaccia and prosciutto for an amazing grilled cheese. This cheese is very versatile with pairings from Prosecco to light, fruity reds such as a Nebbiolo.
