Ridgeline is named so because it is reminiscent of the Blue Ridge Mountains in Fall. The paprika coating represents the foliage and the ash line represents the mountains. The ash is derived from vegetables and lends no flavor but does create a striking visual appearance. The paste of the cheese is mild and buttery, pleasing and a little salty, one could liken it similar to a younger Provolone.
