Galax is a small town of about 6,500 people, located 2,800 feet up in the Appalachian Mountains and named for the evergreen ground cover Galax urceolata (If you’ve taken up hiking during quarantine, you’ll recognize this ground cover) The pastures of the dairy are preserved in this milk, yellow, floral and savory. The aging creates a velvety texture of the paste as the cheese is fully ripened from the outside and within. We couldn’t say more about how we love this cheese. Enjoy it simply with crusty bread and dressed greens. This would also be wonderful with a homemade (or store bought!) pepper jelly.
