Hickory Grove
Hickory Grove is a Trappist style cheese, washed with a blend of brine and annatto, a natural food dye. Though not produced in a monastery as most Trappist cheeses are, the cheese is named for the Baptist church down the street from the farm. This cheese is buttery up front with a pleasing, lingering finish. It pairs well with a Pale Ale and cornichons.
