Providence is one of Goat Lady Dairy’s farmstead cheeses, meaning that it is made from the their farm’s milk. When first creating this Providence, they had originally aimed for a cheese similar in the style of Taleggio, a washed rind and a little pungent but the cheese had other ideas and they liked the outcome. These wheels are aged an average of 9 months. The rind is natural and takes on a stoney appearance. If you think Manchego, you’re not far off as they do share similar qualities. Enjoy this grated on vegetables or with a fig preserve.
