This raw-milk Manchego is textbook, as it should be, from it's ivory white color and lactic aroma and yogurty tang to the distinctive zigzag pattern on the rind. This cheese is semi-curado, aged for about three-months, and retains a smooth texture. Though traditionally paired with membrillo, it's mild sweet and salty flavor can pair with a variety of sweet or savory accompaniments. Try shaved on your salad, melted on a grilled cheese with serrano and honey.
