The cheese is melting on the palate, nutty to almost peanut-buttery and not overly stinky. If you prefer a milder version of this cheese, enjoy it June - October. If you prefer to try a more potent version, try this cheese later in the season November - February. Grayson pairs wonderfully with fig preserves or with pickled vegetables.
