Cantal

Cantal is often to be thought of as France's oldest cheese with history going back to the Gauls. Some even say it is the French version of cheddar. Our Cantal is "jeune" or young and aged for about 60 days. The paste is pale and straw colored with a milky flavor with sublte notes of toasted hazelnuts. Not only is it an easy cheese for snacking, it can be used traditionally as they do the Auvergne region in Aligot, a whipped potato dish with almost as much cheese as there are potatoes. We use this cheese in our mornay sauce used in our mac & cheese.
