Roquefort

Roquefort is a cheese that needs no introduction. It is made in the Aveyron region of France, an area known for limestone geology that influences what grasses and wildflowers grow, therefore influences the flavor of the milk. Cheese are aged in limestone caves where the open texture of the cheese, inoculated with penicillium roqueforti, develops its sweet, buttery notes offset by the tang and spice from the blue.
