Bleu d'Auvergne

Named for its place of origin, the Auvergne region in the South of France and is often thought of as a cow's milk version of Roquefort. Though the cheese is laden with blue veining, the cheese is mellow and meaty and a great cheese for those who think they don't like blue cheeses. This cheese works just as well in cooking as it does after dinner enjoyed with a dessert wine.
