Goat Lady Dairy began just over 20 years ago on an old, abandoned tobacco farm. They have grown over the years and purchase milk as well as use milk from their own herd to make cheese. Sandy Creek is a bloomy rind with an edible rind which brings a mushroomy earthiness to the cheese, that is mild and buttery. The layer of ash is neutral in flavor but creates a striking appearance. Enjoy this on a salad or with a fig preserve.
