Red Barn is keeping dairy as a way of life alive in Wisconsin. Milk is purchased from families who primarily earn their living by working the land. Though milk is pooled from various farms, this is not your average commodity milk. A premium is paid and incentives are provided to families to ensure quality and cleanliness of the milk - the end product is raw cheese, so a high quality ingredient is a must. Cupola is a grana style cheese - meaning it is grate-able, but it can also be enjoyed as a table cheese. It’s bright tang and nutty notes are an excellent way to start a meal.
